The nests of the edible-nest swiftlet (Aerodramus fuciphagus) are made almost entirely from hardened saliva and produce a gelatinous soup, famed for its aphrodisiac qualities. Known as yan wo (literally “swallow’s nest”) these constructions have become one of the greatest delicacies of Chinese cuisine (a single kilo can sell for 짙6,520). Once harvested from caves, they are now farmed in large purpose-built concrete buildings in the coastal towns of Northern Sumatra, where the birds naturally gather. Edible bird nest exports to Hong Kong now account for 0.5 per cent of Indonesia’s GDP. |
